Baked Ziti a la Joe

Serves 4

2 tbsp. extra virgin olive oil

2 cloves garlic, minced

1 lb. meatloaf mix

2 ½ cups marinara sauce

1 pound Ziti, cooked al dente

2 lbs. Biazzo Whole Milk Ricotta

8 ounces Biazzo Whole Milk Mozzarella, sliced

Salt and freshly ground black pepper to taste

Parsley, for serving

  1. Preheat oven to 350 degrees.

  2. In a large skillet, heat the oil over medium-high heat.

  3. Add the garlic and sauté until fragrant, about 1 minute.

  4. Add the meatloaf mix. Use a wooden spoon to break the meat into chunks.

  5. Cook until the meat is fully cooked and there are some crispy bits, about 8 minutes. Season with salt and pepper, to taste.  Remove from the heat and set aside.

  6. Spread 1/2 cup sauce on the bottom of a 9” x 13” casserole dish.

  7. Scatter half the al dente ziti over the sauce, followed by 1 cup of the sauce.

  8. Spread half of the meat over the sauce.

  9. Lightly layer 1 lb. Biazzo Whole Milk Ricotta over the layer of meat.

  10. Place the sliced (8 oz.) Whole Milk Mozzarella over the Ricotta layer.

  11. Repeat with the remaining ingredients, as above.

  12. Bake until the cheese is melted, about 30 minutes.

  13. Garnish with fresh chopped parsley.
