Cheesy Frittata

Serves 6
12 large eggs
½ cup heavy cream
1 tsp. salt
½ tsp. freshly ground black pepper
1 cup baby spinach
1 red onion, sliced thinly
½ cup Biazzo Whole Milk Mozzarella, shredded
¾ cup Biazzo Part-Skim Ricotta Cheese

Preheat the oven to 375 degrees.

In a large bowl, whisk the eggs.

Add the heavy cream, salt and pepper; whisk to combine.

Scatter the spinach, red onion and Biazzo Whole Milk Mozzarella, shredded, in an 8” cast iron skillet.

Pour the egg mixture over the vegetables and cheese.

Dollop the Biazzo Part-Skim Ricotta Cheese over the egg.

Bake until the egg is set, about 35 minutes.
