Ricotta Pesto Tartlets

Serves 5

 

8 oz. Biazzo Whole Milk Ricotta Cheese

¼ cup pesto

1 tsp. grated pecorino cheese

½ tsp. salt

15 mini phyllo cups, defrosted and crisped in the oven

15 cherry tomatoes

 

  1. In a medium sized bowl, combine the 1 cup  (8 oz.) Biazzo Whole Milk Ricotta Cheese, pesto, pecorino and salt and stir well until all ingredients are fully incorporated.
     

  2.  Transfer the ricotta cream into a piping bag with a round tip.
     

  3.  Pipe the ricotta cream into the phyllo cups and top with a cherry tomato.
